Azesty cocktail combining Tito’s Handmade Vodka, fresh lime juice, and aromatic lemongrass syrup, topped with club soda and garnished with mint and lime for a delightful twist on the classic mojito. Serve with Tamarind Glazed Sea Bass with Green Papaya and Herbs.
Ingredients
- 2 oz. Tito’s Handmade Vodka
- 1 oz. fresh lime juice
- ½ oz. lemongrass syrup
- 4 to 6 fresh mint leaves
- Club soda
For the syrup
- 1 cup water
- 1 cup granulated sugar
- 2 stalks fresh lemongrass, chopped
Preparation
For the syrup
- Combine water and sugar in a small saucepan over medium heat, and stir until the sugar dissolves completely.
- Add the lemongrass to the saucepan, and simmer for 10 to 15 minutes, or until the mixture is fragrant and slightly thickened.
- Remove from heat and let cool completely.
- Strain and store in a sealed container in the refrigerator for up to two weeks.
For the cocktail
- Gently muddle mint leaves in an empty glass; then fill with ice.
- Add vodka, fresh lime juice and lemongrass syrup; stir to combine.
- Top with club soda, and garnish with a lime wedge, a mint sprig and a stalk of lemongrass, if desired.
