Azesty cocktail combining Tito’s Handmade Vodka, fresh lime juice, and aromatic lemongrass syrup, topped with club soda and garnished with mint and lime for a delightful twist on the classic mojito. Serve with Tamarind Glazed Sea Bass with Green Papaya and Herbs.

Ingredients

  • 2 oz. Tito’s Handmade Vodka
  • 1 oz. fresh lime juice
  • ½ oz. lemongrass syrup
  • 4 to 6 fresh mint leaves
  • Club soda

For the syrup

  • 1 cup water
  • 1 cup granulated sugar
  • 2 stalks fresh lemongrass, chopped

Preparation

For the syrup

  1. Combine water and sugar in a small saucepan over medium heat, and stir until the sugar dissolves completely.
  2. Add the lemongrass to the saucepan, and simmer for 10 to 15 minutes, or until the mixture is fragrant and slightly thickened.
  3. Remove from heat and let cool completely.
  4. Strain and store in a sealed container in the refrigerator for up to two weeks.

For the cocktail

  • Gently muddle mint leaves in an empty glass; then fill with ice.
  • Add vodka, fresh lime juice and lemongrass syrup; stir to combine.
  • Top with club soda, and garnish with a lime wedge, a mint sprig and a stalk of lemongrass, if desired.
