A knife made to clean fish needs to have a sharp blade, a good handle and a durable finish that can take the salty marine environment. Both the 9-inch Stiffie and the 9-inch Flex fillet knives feature a 6-inch textured grip handle made from a thermoplastic polymer that’s wrapped in a special super-sticky rubber. The blades are made from stainless steel with a Teflon coating, and the tang extends all the way through the handle. A trigger grip lets you apply extra pressure, while the thumb and finger pads allow for greater control. And, of course, they boast a razor-sharp edge.
